An absolute ton of reasons. I understand your principle, but the example you used is a bad one.

We used a H4N & Rode NTG-2. We were aware that field recording would give us too much noise so we made the decision early do all the sound later. It's probably our proudest part of the film really; first time using the camera/sound/edit software etc. Next one we will do full pre-prod and take on...

Maybe the guy getting ready at the start isn't the Reaper and the car was stolen ;) Or perhaps it's his first day on the job.
