Which is better a gimbal or a track and dolly?

The shot(s) you're trying to achieve should be the real motivation behind selecting one over the other. They are different kinds of motion, and neither is "better" than the other on its own.
 
I agree with Will. Each offers something different. A gimbal is not
good for a tracking shot. Shouldn't you be setting you the shot you
want to see and then asking what piece of equipment is "better"
to get that type of shot?
 
A gimbal will be much better for shots which require a gimbal, while a track and dolly will excel at shots which call for a track and dolly. Neither will be good for shots which require a tripod or crane. Additionally, a camera will be the best choice of device for capturing whichever shot you decide is appropriate.
