What's a good dolly/track system?

A panther dolly:

You could probably get away with an Elemack dolly.

Of course, Fisher dollies are awesome, but you need a budget for them

My low budget suggestion would be to use long pieces of PVC pipe that you can level with wood wedges, and a skate wheel platform to roll on top

Track Dolly

I have bought PROAIM Track Dolly With 12Ft Straight Track 2 months back. I used it for one of my project and it gave me "WOW" results. The ability to pack the track in a kit that works with our system is great. The modular setup works great for our style of shooting - where we are in a lot of diverse locations and always packing and moving. it's pretty good, you should check it out!
