Casino royale springs to mind for me.
The night chase in the desert from No Country for Old Men, while minimalist compared to grand set pieces like one in The Matrix, kept me at the edge of my seat. Masterful use of intensity.
Inception's foot chase, while not particularly a classic, was also one hell of a pursuit. But the best would definitely have to be the climax of The Shining. Up until that disturbing, horrifying sequence, the film had worked hard at creating this haunting psychological setting to double the stakes, and this, combined with the innovative use of the Steadicam, makes it particularly special.
