So a while ago back in late 2019 during my last semester of college/film school, after me and my friend/DP had a color grading session on my indie short film that I wrote, directed and produced, we ate dinner and as we said our byes, he said to me "Hey, by the way, you better be a damn good director, because there's competition out there", what does he mean by that?

He means there are a LOT of other directors trying to be noticed
so you need to be really good.

Absolutely! I've made three short films after that.
