It sounds like you've got a nice plan for starting out. And already having a lot of the equipment is a big help. You just need to build a bit of a sound kit to go with that.
Before you go upgrading your camera though, consider that DSLR has a 12 minute (or 4GB, iirc) limit on video clips. Which is not suited towards documentary work. Look into a consumer or prosumer HD video camera. If you still want to use your lenses you can pick up a nice 35mm adapter.

The Panasonic GH2 has no clip limits, it just starts writing to another file when it reaches 4gb.
