How would I achieve this effect?

Hello, I'm making a short drama film. Okay, in one scene I want to have the water from the sink mysteriously turn on. What I was thinking about doing was using stop motion to achieve the sink knobs turning by themselves. Any other ideas of how I could do this? Thanks

Is your project actually claymation? Or are you meaning general stop-motion for live-action?

In any event, if you just want the water to start flowing - under the sink you'll find a faucet to turn on/off the water flow to the sink above. Turn it off and have someone ready to turn it back on, on cue.
 
you could shoot it from above, open the faucet w/ a rod. Then mask out the rod using footage taken w/out the rod.... many ways to do this. Stop motion is one... turn the handle a fraction of a turn at a time and only use the footage w/o the hand or whatever turning the faucet
