I can't claim this wisdom as my own Clive - Wideshots the one deserving of recognition. ;-) About the grain: Could be from gain as previously mentioned or it could be from over-zealous color correction.

Use flourescents - take Knightlys approach. Cheap and effective with no need for diffusion. If you want really hard light you can always plug in the work lights for a shot or two.
