Technical question on focusing

Hi,

Suppose my camera (Canon T3i) in on the tripod and I am rotating the camera on it. As I move the focus changes and things get out of focus. Please let me know shall I manual focus instantly or cut and take another shot by focusing and join that in the software. Please let me know which technique is appropriate. Please keep in mind that I am asking this in perspective of documentary.

You will need to continously focus as you move the camera. Good focus pulling is an art in itself and takes a lot of practice to master, but for simple shots it is not super difficult, you just have to practice it.

Know where your focus needs to end when your pan ends... that way you can PERFORM the pan/focus pull and end up where you need to so you don't look as if you're fishing for focus, rather that it's just a planned part of the movement, which makes it disappear.
