editing Solving video format issues

I'm an intern learning...

Right now I'm concentration on my editing skills in Final Cut Pro 7.

I've been working mostly with SD video from 3 cameras that are live edited in Wirecast.
I take the output of Wirecast and edit a subsection of a presentation then compress it and upload it to Vimeo.

Everything was set for me and I had no issues for the first few edit sessions.

THEN I was tasked to take some video files from 3 different cameras (each a different subject) and not only edit them BUT output them in different formats for different target players. I've been able to stumble through most of the setups and exports - the editing has become easy BUT I keep making mistakes in formats and return to stumbling my way along. It can sometimes take a hour or more on the export and I find I made a rally bad formatting mistake.

Is there a handbook on editing that covers the issues of formatting? Is there a document on the internet that covers formatting issues?

Doesn't your employer have this documented, if they need non-standard exports?

Nope - Its an organization that relies on volunteers, AND there isn't any documentation on anything. Everything regarding editing is embodied in the lead A/V guy which I have access to about once a week. I get hints about formatting issues from various sources BUT everything stills seems to be hunt and peck in search for information. I'm kind of on my own that's why I'm asking the forum. It would be nice if there was a Wiki associated with this forum or other forum where such information is presented.

Any advice on the subject is welcome.
