I'm a newbie so hopefully it's quite obvious! How has he made this video so the subject doesn't move and is always in the center of the shot with everything else revolving around him?

He's got some kind of rig attached to his body, with the camera at the end of it. And I'd guess it's probably a very light-weight camera. Basically, he's taking a selfie, but instead of using his arms to hold the camera, he's got some PVC pipes strapped around his waist (or something like that).
