Definitely go for the iMac if you're willing to spend a couple extra bucks. I run CS5.5 on the latest iMac with 8gb of ram and it is PERFECT. It's ridiculously fast and the results are amazing.

If I were to go the route of separate recording, what would be the best way to sync the video to audio in post?

I personally prefer Premiere because of it's ridiculously fast interface with the 64bit and all. And, it's much more like FCP7 and the switch over is almost seamless.

Great! The idea presented is broad enough to where you could pull either a short OR a feature from it. I say go with the feature because, at least, I see a million and two different directions you could go with this and the idea is solid and something interesting!
